I love me some (Illinois) bubbles

In case you hadn’t heard the news, because I’m pretty much blasting it everywhere, my first piece for Gapers Block is up!

I wrote about winemaking in Illinois, and yes it’s totally true there are awesome things happening in this state. (And not so awesome things, but that’s true of pretty much everywhere).

The inspiration for the piece was the bubbly wines from Illinois Sparkling Co., (ISC) which I *heart,* especially the dry Brut. I have a weak spot for bubbles. I like to order a Cava or Prosecco or something similar if I’m at a bar or at a restaurant before the meal (because the bubbles stop me from drinking too fast and they usually have less alcohol. I’m responsible). If I had the cash, I’d drink bubbles on a regular basis because they go so well with the fried foods I love.

ISC winemaker Mark Wenzel had so many interesting things to say about wine and winemaking, I wish I was able to include everything. Here’s one reassuring thing though, people are getting on the bubble train and realizing that sparkling wine goes great with lots of foods and lots of occasions.
